The entire Alpine region is the fertile ground for Alpine cuisine. Its credo is to preserve what is good without ignoring the spirit of the times. Unique ingredients, traditional and modern approaches and a high density of original and creative producers and chefs characterise this culinary style, making it one of the most exciting of the present day. The 2024 Festival of Alpine Cuisine will therefore also address controversial topics such as generational conflicts when handing or taking over a business, the debate about vegan chef training and the issues surrounding lab-grown meat.

AUSTRIAN ALPINE CUISINE - READY FOR THE STARS

Prior to the first talks on the stage in the Ferry Porsche Congress Centre, Salzburg seminar farmers and a local hero from Zell am See-Kaprun invite from 9 am to a regional breakfast in the middle of the Alpine Marketplace with producers from SalzburgerLand and beyond. Austria's positioning in the international culinary competition will take centre stage at the subsequent opening panel with Karl and Rudi Obauer. Other major topics are the comeback of the Michelin Guide from 2025, and the new culinary concept of the Austrian National Tourist Board. The future culinary approach of the Alpine country should no longer focus on the Schnitzel identity, but should lead towards establishing the true character of Austrian cuisine instead. Special emphasis will be placed on the "originals" of each federal state: from influential personalities and locations to recipes and products that define Austrian cuisine.

SWISS STAR CHEF SVEN WASSMER VISITS SALZBURGERLAND

One of the absolute highlights of the 5th Festival of Alpine Cuisine will be the appearance of 3-star chef Sven Wassmer (Restaurant Memories, Bad Ragaz). The Swiss master chef is considered one of Europe’s best-known figures of young Alpine cuisine. He will be presenting a signature dish at the live cooking show, and he will provide visitors with exciting insights into his culinary philosophy of "Alpine cuisine".

SAVOURING AND DISCOVERING ALPINE CUISINE

There will also be time to savour Alpine cuisine, exchange ideas with refiners of food and sample their products at the Alpine Lunch on the day of the event. Under the patronage of 5-Toque chef Andreas Döllerer, top chefs from the Alpine region will serve guests the entire spectrum of Alpine cuisine with one signature dish each. Gourmet chef Andreas Döllerer from SalzburgerLand will treat guests to interpretations of Alpine cuisine together with Jamie Reisinger (Patissière of the Year 2023, Restaurant Hubert Wallner in Maria Wörth) and Florian Zillner (Flos Restaurant, Zell am See).

After a stage programme full of variety and exciting insights into the multifaceted Alpine cuisine, guests can look forward to a networking finale that looks beyond the valleys in keeping with the motto of the day: the delightful day ends with South Tyrol’s 5th season - Törggelen - and offers another opportunity to network with leading industry representatives from the catering, hotel, and tourism sectors in addition to seasonal specialities from regional producers.

For the first time, the Festival of Alpine Cuisine will prove that enjoyment and sustainability are perfectly compatible also off stage by fulfilling the criteria of the Ecolabel for Green Meetings. Travelling to and from the event by public transport in SalzburgerLand on the day of the event is also free with the event ticket.
